There is a major learning curve for children growing up in the city on the subject of our natural environment. In conjunction with our theme of food and where it comes from, our early spring incentive involved a trip out to South Wales where Mr. Matt has been tapping trees for maple syrup. We learned how the sap is taken from the trees and boiled down into the delicious sugary delight we enjoy on our pancakes, ice cream, and as a substitute for sugar that is shipped from far away. We were also able to have fun in the great outdoors, taking a hike and exploring the natural wonders of the ecosystem found in creeks.

For 2013, the Olmsted Parks Conservancy gave 5 Loaves Farm (the urban farm that is a ministry of the Buffalo Vineyard) permission to tap 4 large maple trees in Delaware Park, and hold an urban maple sugaring demonstration that was open to the public. GRACE After School was privileged to be a part of that demonstration, which brought the unique experience of rural maple sugaring into the city of Buffalo.
The demonstration included a discussion of different types of sweeteners we use today, a reenactment of the discovery of maple syrup, and tastings of maple sap and finished syrup. Afterwards, we spent some time on the playground at Delaware Park!
